4 cups brussel sprouts, halved or quartered depending on the size
1 t olive oil/ avocado oil

2 T dijon mustard
1 T pure maple syrup
1 T freshly squeezed lemon juice
1 clove garlic, minced
3 T extra virgin olive oil


  1. Preheat oven to 400.
  2. Prepare the brussel sprouts- depending on their size halve or quarter.
  3. Arrange the sprouts on a baking sheet covered with parchment paper. Drizzle with oil making sure all of them are uniformly coated.
  4. Add salt and pepper to taste.
  5. Roast at 400 for 25 minutes, stirring the sprouts occasionally so they all have a chance to brown and crisp up,

In the meantime mix together the ingredients for the dressing. Set aside.

While still hot, place the sprouts in a dish or bowl and drizzle the prepared dressing over the sprouts. Serve immediately.
