4 cups brussel sprouts, halved or quartered depending on the size
1 t olive oil/ avocado oil
2 T dijon mustard
1 T pure maple syrup
1 T freshly squeezed lemon juice
1 clove garlic, minced
3 T extra virgin olive oil
- Preheat oven to 400.
- Prepare the brussel sprouts- depending on their size halve or quarter.
- Arrange the sprouts on a baking sheet covered with parchment paper. Drizzle with oil making sure all of them are uniformly coated.
- Add salt and pepper to taste.
- Roast at 400 for 25 minutes, stirring the sprouts occasionally so they all have a chance to brown and crisp up,
In the meantime mix together the ingredients for the dressing. Set aside.
While still hot, place the sprouts in a dish or bowl and drizzle the prepared dressing over the sprouts. Serve immediately.
