1 bunch dinosaur kale

Half of a green apple, cubed

1 small sweet potato, peeled and cubed into small cubes

1 t avocado oil

1/2 cup roasted chickpeas

salt and pepper to taste



  1. Preheat oven to 375. Place cubed sweet potatoes on a parchment line baking sheet. Drizzle with avocado oil making sure all the potatoes are completely coated. Sprinkle with salt and pepper. Roast until just cooked through and slightly browned.
  2. Remove the stems from the center of each kale leaf and discard. Wash and dry the leaves thoroughly. Cut the kale into small, bite-sized pieces.
  3. Assemble salad beginning with the kale and then adding the rest of the ingredients.
  4. Drizzle with your favorite Caesar dressing. I like Tessemae’s or Primal Kitchen
