1 bunch dinosaur kale
Half of a green apple, cubed
1 small sweet potato, peeled and cubed into small cubes
1 t avocado oil
1/2 cup roasted chickpeas
salt and pepper to taste
- Preheat oven to 375. Place cubed sweet potatoes on a parchment line baking sheet. Drizzle with avocado oil making sure all the potatoes are completely coated. Sprinkle with salt and pepper. Roast until just cooked through and slightly browned.
- Remove the stems from the center of each kale leaf and discard. Wash and dry the leaves thoroughly. Cut the kale into small, bite-sized pieces.
- Assemble salad beginning with the kale and then adding the rest of the ingredients.
